Since that is super boring (the yarn is nice though - Spunky Eclectic).. I thought I would pay it forward a bit.
I'm always trying out tasty recipes that people post on their blogs, and I've found some really good ones. Today, I'm making my Mom's meatloaf, and thought I'd share. It isn't anything super fancy. Just good comfort food.
Mom's Meatloaf:
- 1 1/2 lbs ground beef
- 1 cup tomato juice (she tells me to get those little V8 cans, and add in 2 oz water to make it to a cup)
- 3/4 oats
- 1 egg
- 1/4 cup chopped onion
- 1/2 tsp salt
- 1/4 tsp pepper
Combine in a bowl with your hands. Put in a loaf pan and cook for an hour at 350.
YUM!

Very pretty socks! We had meatloaf this week - always a good comfort dinner - we use oats in ours too...
